When it comes to rum, there's a lot more variety than you might think. While all rum is distilled from sugarcane byproducts, the specific production methods and aging processes can result in vastly different flavors and characteristics.
How Rum is Made
Rum begins with molasses, a byproduct of refining sugarcane into sugar. The molasses is fermented and then distilled, resulting in a clear, unaged rum. From there, the rum may be aged in oak barrels, which imparts caramel, vanilla, and other complex flavors.
Types of Rum
Light rums are typically unaged or lightly aged, resulting in a clean, crisp flavor profile. Gold rums have been aged longer, developing richer, more complex notes. Dark rums are aged extensively, often taking on flavors of coffee, chocolate, and dried fruit.
